Nero d'Avola I.G.P terre siciliane.
Grape varieties: 100% Nero d’Avola.
Production area: Sicily Italy.
Training system: Vertical trellis, implanted on varied soil mostly clay and limestone, rich of organic material.
Harvest period: End of September.
Vinification: The grape are destemmed and crushed, extraction on skins followed by 10/15 days of maceration, malolactic fermentation in stainless steel vessels, fermentation temperature 28°c. Fermentation period 10 days.
Ageing: Maturated in stainless steel until mid March and aged for 3 months in bottle.
Alcoholic content: 13% by vol.
Food pairing suggestion: It is accompanied by Italian appetizers, pasta dishes and generally to the Mediterranean cuisine. It should be served at a temperature of 16°c and uncorked few minutes before the consumption, in order to enhance the freshness and the drink snappy and juicy.
Capacity: 75 cl med bottle, bag in box 10 litre.
